This vintage of Swim Spot is 100% Blanc Du Bois, sourced from Starry Night Farms just north of Industry, TX. This three acre vineyard is owned and farmed by James Kasparek. It sits on a little hill in the beautiful rolling hills of Austin County. These vines are own rooted and trained on a Watson System that allows for good air flow which decreases disease pressure. These grapes were handpicked, whole cluster pressed, and fermented in stainless steel. Lightly effervescent from CO2 added prior to bottling. Notes of key lime, white flowers, ginger, stone fruit, lilac, and lemongrass. Serve this wine over ice in a kayak.
