This Beaujolais Nouveau inspired wine is 100% Cinsaut sourced exclusively from Phillips Vineyard in the Texas High Plains. It's light, fresh, and juicy- the perfect wine to pair with Thanksgiving dinner, or for the more patient, the long hot days of summer.
For those who may not be familiar with Beaujolais Nouveau style wines, they are an easy drinking, cheerful style of wine made to celebrate the end of harvest in the Beaujolais region of France. It is traditionally bottled 6-8 weeks after harvest and released on the 3rd Thursday of November every year. We decided to make a wine inspired by this tradition when some of our favorite growers ended up with some extra Cinsaut grapes. Our "nouveau" Cinsaut was harvested at night, destemmed, and fermented whole berry in open top fermentation bins with regular punch downs. After pressing, this wine was settled in stainless steel for a month, followed by a light filtration, and then bottled. It is light, juicy, and meant to be enjoyed as soon as you like.
